It has been so cold this week, but in the perfect it is really Fall kind of way. Its been perfect for casseroles, hot biscuits, and apples.
Some of the foods we’ve been enjoying…
-Corn and “fill in the blank” saute-I’ve been making the corn and zucchini with basil saute but using grape tomatoes, and spinach, or whatever other vegetable I feel like throwing in there. I really think I cannot ever eat corn without basil again, so good.
-Homemade Applesauce-we just made one jar by coring and peeling 6 very large apples from our picking trip. Then we chopped them into smaller squares and cooked them on the stove top with cinnamon and a dash of brown sugar. Once they were soft (and smelled oh so good) I ran them through the food processor. We enjoyed the applesauce with 2 meals and then it was gone!
-My Mom’s Baked Mac n cheese-These smaller batches are better for our 3 people dinner nights. It makes enough to fill a small pan + one individual sized pan (which I don’t bake but save as a leftover to be baked right before eating) In a saucepan melt 1 tbsp butter and 1 tbsp of flour. Then add 1 cup of milk and 1 cup of shredded cheddar. heat until a smooth creamy sauce. Pour over 8oz of elbow noodles which have been boiled and bake at 350F for 20-25 mins.
-Sweet Potato Casserole- I love using the individual size dishes for these because then I can use the Dandies vegan marshmallows on Tom’s. They melt and brown just like regular marshmallows, they are really great!
and yes I do realize that we ate two potatoes (mashed and sweet) in one meal…but it was awesome, and the sweet potatoes are like dessert!
