I’ve been real bad about taking food photos, its so hard to remember! But here are two things that stood out, and I wanted to share. Corn and zucchini saute with basil from Martha. I really loved this recipe, and I am not a fan of corn. Maybe because corn just always tastes best right off the cob, or the way it tastes with zucchini and basil-either way I loved it, and the kids didn’t hate it. They both said it was fine, and since corn is a grain it is nice to mix it with a veggie.
The bottom photo is butternut squash pie. Tom said he thinks he might love it even more then pumpkin pie! I roasted the butternuts in the oven the night before I made the pie. I was roasting two so I could use one for a soup, but I think they were on the small size because it took both to make the pie. I used this recipe but made my pie crust, and roasted butternut squash in a 400F oven for 45 mins before using my food processor to puree it.
This week there is going to be some soup, some grilled sandwiches, butterCUP squash, and something involving apples.
