Tonight we are having a little family dinner complete with vegan lasagna (thanks to teese!) I wanted to make the salad a little special so I decided to carve the radishes into mushrooms and add these little gnomes that I got off Esty last week. Someday soon I am going to get together a post about my Etsy buys…I’ve gotten some pretty awesome stuff in the past year, including this one necklace that every time I wear it a stranger compliments it…every single time!
Anyhow back to the salad. I took photos of the mushroom making incase anyone would like to spice up a salad, veggie tray, or just add them to the side of lunch for fun sake.

Kids can help, but the knife cutting part you may want to do yourself because you will need a small sharp paring knife. Choose your radishes and decide which will be the top and which part the stem.
Using the paring knife carefully cut a ring around the middle of the radish, do not cut all the way through or you will have just cut the radish in half. From the bottom to the middle line you just cut carefully carve away slices to reveal the inner white of the radish. Carve the whole way around and you have your stem. Then cut the red bottom off so the mushroom can sit.

Using a straw poke into the “mushroom cap” and wiggle slightly. This is to make the white dots. Pull out the straw and using the paring knife or a toothpick flick up the circle. It should pop out quite easily.
The mushrooms will stand on their own, or if you want them to stand on top of a salad cut the straws into different lengths and poke them into the bottoms of the mushrooms. You can hide the straws with bits of lettuce.

What a lovely healty give-away is this! Maybe I’ll make them next year for my oldest girl to give to her classmates!
